I do something like that, but each installation is in a separate
partition (and there's a further partition that contains all my data
and no operating system, and they can both see it). I use Boot Magic
(supplied with Partition Magic) as the boot manager. When you tell
it, at boot time, which operating system to boot, it makes that
partition visible and active and the other one invisible/inactive,
so neither installation of Windows can see the other one's C: drive.
