I have gone into "Display Properties" and tried setting a predefined scheme
but this hasn't brought back the tab or menu wording. I've looked at the
individual settings but I cant find a setting that will make this text
readable.


Third tab from the left should be the Appearance tab.
The upper half shows examples of window-elements.
Click on the suspect display-element (a menu, a menu selected
item etc.) and options will change in the lower half.
popup-lists should alow you to change the colors of texts,
backgrounds and whatever you need.
